Hey Everyone!
I'm Rebecca! I'm a new Vego and I created this blog to share how it's going and new recipes that I'm trying for the first time! I've been vegan for about a week now and man(!) it's actually going great! I've had pretty severe GI issues for most of my life now and in the past week I've had minor issues with my system, seriously though, it's been wonderful. Wednesday will be my first truly vegan shopping trip and I'm pretty excited about it, now all I have to do is make my list!

Well, so far, replaced my cow's milk with Quinoa milk and Almond milk, I love almond milk, it's my favorite drink ever. I've had apple cinnamon quinoa for breakfast (Link here), Vegan cereal, and Flourless chocolate vegan muffins (Link here) and yes, these muffins taste exactly like you think they will.
Lunches and dinners have been harder for me to figure out, mostly because I work. But I've made this fantastic Veggie Risotto, Almond garlic pasta, Vegan chop suey, Grilled Pizza, Pasta Salad, and Soba Noodles with a Peanut Sauce.
